Longhi’s Restaurant – Our Story

Restaurant Background

Our family used to throw parties, BIG parties! The whole family would cook together, creating wonderful dishes. And while we cooked, we would talk about opening a restaurant someday. My father Bob visited Maui and fell in love with the island. He made the bold decision to change our family’s fate, and relocated us to Maui to pursue his dream, opening the World Famous Longhi’s Restaurant in Lahaina in 1976. With the help of myself and my brother Peter, the Maui location became a Lahaina landmark. Known for its incredible food, spectacular open-air atmosphere, stunning sunsets, live music and plenty of Aloha. The party continues as ourfamily legacy lives on, Peter and I are the proudowners of Longhi's Ko’Olina on Oahu and Longhi's Ka'anapali on Maui.

Restaurant Concept & Philosophy

The Longhi family built the restaurant around a deep commitment to quality, freshness, and unforgettable dining experiences. He refused to compromise on ingredients and famously rejected the idea of frozen food, insisting on sourcing the freshest products possible. The restaurant pioneered relationships with local farmers and fishermen while also importing specialty ingredients from around the world.

Traditions of sourcing that we still follow today:

Fresh Hawaiian fish such as Opakapaka and Onaga, Live lobsters from Maine, Clams and mussels from Washington, Prime beef from Nebraska, Olive oil, cheeses, and pasta from Italy, Fresh chicken from Oahu, The restaurant still maintains many of these traditions today, including fresh orange juice squeezed daily in-house.

Longhi’s Locations

The Longhi family has always believed that ambiance is an important aspect in creating the perfect dining experience, always showcasing Hawaii’s beauty and creating a lively, energetic atmosphere for guests. Our Ko Olina and Ka’anapali locations both enjoy beautiful west side sunsets with stunning ocean views. Our Oahu location is nestled in the beautiful, exclusive Ko Olina resort area, surrounded by a peaceful koi pond, lush greenery and leading to lagoon ocean views. Our Maui location is a hidden gem, just steps away from the stunning white sands and blue waters of Ka’anapali beach. Both locations whisk you away to a beautiful place allowing you to sit back and enjoy the views and delicious cuisine.

Head Chef

Longhi’s Head Chef, Ricardo Thompson, has been with the Longhi’s family for over 22 years! Starting out as a young man in our Maui locations, Lahaina and Wailea, he worked his way up, eventually moving to Oahu, leading the team at Longhi’s Ala Moana. Now based out of Ko Olina, he carries on the traditions and recipes Bob and his family have created over the last 50 years.
